- 1/3 C melted coconut oil
- 1/2 C maple syrup
- 2 eggs
- 1 cup mashed ripe bananas
- 1/4 C almond milk
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 to 1 tsp cinnamon
- 1 3/4 C whole wheat flour (or oat flour)
- 1/3 cup old fashioned oats (more for sprinkling on top)
- Toppings (optional) - I used dark chocolate hemp seeds
Directions
- Preheat oven to 325F. Grease 12 muffin cups or add paper cups
- In a large bowl, mix coconut oil and maple syrup with a whisk. Add eggs and beat. Mix in mashed bananas and milk. Mix in baking soda, vanilla extract, salt, and cinnamon.
- Add flour and oats and mix. You may add additional nuts or chocolate if desired.
- Divide the batter evenly among the muffin cups (about 2/3 full). Sprinkle with oats and additional toppings, if desired. Bake for 23-25 minutes or until toothpick inserted comes out clean.
- Let cool and ENJOY!!
