These bad boys are FREE from refined sugars, flours, and any unnecessary additives! These brownies don't have a lot of sweetness to them, but adding some maple syrup or honey can do the trick if you prefer your brownies on the sweet side! I like to kick up the sweetness with some dark chocolate chips.
Ingredients:
- 15 oz can black beans - rinsed and drained
- 2 Tbs Cocoa Powder
- 1/2 cup rolled oats
- 1/4 tsp salt
- 1/3 tsp liquid stevia (I prefer the Now brand "Dark Chocolate" flavor)
- 2 T maple syrup or honey (OPTIONAL)
- 1/4 cup extra virgin coconut oil; melted
- 2 tsp vanilla
- 1/2 tsp baking powder
Mix everything in a food processor on HIGH for a minute or two. You want a thick consistency (thinner than frosting but thicker than pancake batter). If your batter is TOO thick, add a little non-dairy milk!
Next, add a few dallops of peanut butter by the spoon and swirl with a spoon or a toothpick. Top with chocolate chips if desired!
Bake at 350F for 12-15 minutes and try not to eat the whole pan in one sitting ;) ENJOY!
